LOVELY DAY MATCHA green tea is cultivated according to the same exacting methods practiced by traditional centuries old farms. Plants are shade covered at end of harvest, hand picked, lightly steamed and stone ground to produce pure, crisp and bold flavored matcha tea from mature leaves.

What does ingredient grade mean?
Ingredient grade matcha is made from mature leaves, that have been in the sun longer and yield a more earthy and astringent flavor profile. These leaves are not de-stemmed and the final product is relatively more astringent when compared to early harvest ceremony grade tea.

Can I drink ingredient grade Lovely Day Matcha on its own?
Lovely Day is made of very mature leaves harvested with most of the stem and vein. The flavor notes are bitter and earthy. We recommend using this grade for blending. If you do wish to drink it straight as a tea, you may find yourself reaching for honey or almond milk. Both good options. Nutritionally all grades of matcha teas are comparable. All are 100% pure shade covered powdered green tea cultivated, harvested and produced in Japan.
Why sift matcha?
For the same reason bakers sift flour before using. The static electricity in the air encourages powders (be it flour, baking powder, cocoa, etc) to stick together and form clumps. The same is true with matcha green tea powder. Sifting matcha smoothes it out and lets it blend better into your drink or cooking recipe.
Where is this tea sourced?
We sourced this matcha from the environmentally friendly hillside region of Nishio. In the late 1800’s a Buddhist priest introduced the varietal and production techniques of the Uji region used in matcha production. Soon Nishio became a formidable producer of matcha tea.
